Never Fail Pastry Recipe

This is the Best pastry recipe ever.it makes 6 double pie shells and is the one I always used.( I say used as I am gluten intolerant now )

5 Cups of Flour (all purpose)
1 Teaspoon Salt
3 Teaspoons Sugar
1 Pound (lb) Lard
1 Teaspoon Baking Powder
(1 Egg in a cup. Beat a little with fork. Add  1 Teaspoon of Vinegar, Beat some more. Add Cold Water to make 1 cup)
mix all ingredients together , wrap in plastic and chill in fridge overnight.
Roll out and start baking.


Gluten Free Pastry Recipe:

Substitute  5 cups all purpose flour with  : 3/4 cup rice flour + 1/4 cup corn starch for every cup of wheat flour. so the calculation would be: 3/4 x 5 =15/4=3 3/4 cups for Rice flour
                                                                   1/4 x 5 =5/4=1 1/4 cups Corn Starch

1 1/4 cups corn starch

or you can try this:
  
Substitute 5 cups all purpose flour with : 2/3 cups Rice flour+1/3 cup Potato Starch/Flour for every CUP of all purpose flour
 So the Calculation would be:
                                                2/3 x 5 = 10/3=3 1/3 cup Rice flour
                                                 1/3 x 5 = 5/3 = 1 2/3 cup potato starch/flour

1 2/3 cup potato starch/flour
1 Teaspoon Salt
